  1. For the chicken: trim any excess skin and fat and rinse (You can cut the chicken into smaller portions if it does not fit into your pot).
  2. Clean all herbs (1 handful of each herb) thoroughly and drain, set aside.
  3. In a clean stockpot pour in water and let it boil.
  4. When the water is a rolling boil, put the chicken and all the herbs into the pot. Turn to low heat and simmer for 1 to 2 hours (or you can use a slow cooker).
  5. Drink 1-2 bowls per day during the fall- winter transition (about 12 days).
